On Brewing (Oolong) Tea

'The first brew is for your enemy, the second for the servant, the third for your wife, fourth for your mistress, the fifth for your business partner and the last you keep for yourself,' - Chinese Proverb

There is truth in this, good loose tea can be steeped more than once and the flavour will alter with each steep. This helps to offset the initial investment given that teabags, while cheaper, are a one-shot deal.

If your are able, pay for the best loose leaf you can get, invest in a decent infusion teapot and you will be rewarded time and time again.

To paraphrase a famous, anonymous quote:

'Life's too short for bad tea!'
